Producing Quality Beef Workshops

FY23 BIWFD Recipes, Mediterranean Grilled Chuck Steak with Garden Vegetables

The Wisconsin Department of Agriculture, Trade & Consumer Protection, Wisconsin Beef Council, and UW Madison Division of Extension Livestock Program are hosting a series of workshops that will focus on producing quality beef in Wisconsin. Workshops will be from 10 am to 3 pm. Topics will include:

  • Live cattle evaluation and discussion by a panel of cattle buyers
  • Impacts of mud, manure and gut fill on dressing percent
  • Impact of mobility/fitness for transport on cattle value
  • Review of the 2022 National Beef Quality Audit results
  • Quality & yield grade discussions
  • Feeding & management practices for increasing cattle value
  • Pre-harvest factors impacting meat quality
