mitchell family favorite cranberry meatballs

Mini Merry Meatballs

"Everyone agrees that Cranberry Meatballs are hands-down their favorite.  This is a comforting dish to enjoy, whether we had a long day of working cattle or simply to enjoy as a Sunday dinner.  With it's simple ingredient list, it can be whipped up in a jiffy and is sure to please your family too."  Amy Mitchell, Spring Creeks Cattle Company, Wauzeka, WI

ingredients:

  • 2 pounds lean Ground Beef 
  • 2 eggs 
  • 1/4 cup water 
  • 1 cup bread crumbs 
  • 1 small onion, grated 
  • 1 1/2 teaspoon salt 
  • 1/8 teaspoon pepper
Sauce 

  • 1 (16 oz.) cranberry sauce, jellied 
  • 1 (12 oz.) chili sauce 
  • 2 tablespoons brown sugar 
  • 1 tablespoon lemon juice

instructions: 

1. Preheat oven to 350°F. Combine Ground Beef, eggs, water, bread crumbs, onion, salt and pepper in large bowl, mixing lightly but thoroughly.  Form into 48 1-inch meatballs.  Place on rack in broiler pan that has been sprayed with cooking spray. Bake in 350°F oven for about 30 minutes until 160°F.

2.  In the meantime, combine cranberry sauce, chili sauce, brown sugar and lemon juice in a large stock pot.  Simmer slowly until sauce is smooth.  Add meatballs.  Continue to simmer slowly for 30-45 minutes.  

3. Serve meatballs over brown rice, rice or egg noodles.
