New York Strip Roast

Cut: Top Loin Roast/Strip Roast
Preparation Time: 30 Minutes
Cook Time: 50 Minutes to 1-1/4 Hours

Main Ingredients:

 1 5 to 5-1/2 pound New York strip roast
 2 tablespoons extra virgin olive oil
 2 tablespoons kosher salt
 1 tablespoon fresh ground pepper

  1. Preheat oven to 500 degrees F.
  2. Place roast, fat side up, in a roasting pan. Rub with olive oil and leave at room temperature for 30 minutes.
  3. Season all surfaces with salt and pepper. Place in oven for 12 minutes. Reduce temperature to 300 degrees F and roast about 10-12 minutes per pound for medium rare (135 degrees F internal temperature) or to desired doneness.
  4. Loosely tent with aluminum foil and let rest for about 20 minutes, slice roast across the grain.
