Fiesta Ribeye Steaks

Cut: Ribeye Steak
Preparation Time: 5 Minutes
Cook Time: 10 minutes

Main Ingredients:

 4 ribeye steaks, cut 1/2-inch thick
 2 TBS. fresh lime juice
 8 flour tortillas, 6-inch
 1/4 c. shredded Colby/Jack cheese
 1 c. refrigerated salsa

Directions:
  1. Place steaks in a utility dish; sprinkle with half of lime juice. Turn steaks over and sprinkle with remaining lime juice.
  2. Wrap tortillas securely with heavy-duty aluminum foil.
  3. Place steaks on grid over medium coals. Grill steaks 7-9 minutes for rare (140 degrees) to medium (160 degrees), turning once.
  4. Place wrapped tortillas on outer edge of grid and heat 5 minutes, turning once.
  5. Top each steak with an equal amount of cheese. Serve with salsa and tortillas. Makes 4 servings.
Recipe Tips:
  • Tenderloin steaks can be substituted for ribeye steaks.
  • To add more Mexican flavor to your steaks sprinkle grilled steaks with chopped cilantro.
  • Cut leftover steak into strips and wrap in tortillas for steak tacos.
